    Honey Pecan Slice and Bake Cookies | Easy Make Ahead Cookies

    Honey Pecan Slice-and-Bake Cookies are easy to make with honey, pecans, and butter. Just roll, slice, bake and enjoy!

    Grandma's Slice-n-Bake Cookies are another slice and bake cookie that is so easy to make, and my Honey Sweetened Peanut Butter Cookies with whole wheat flour is another cookie recipe using honey as a sweetener which is so delicious and wholesome.

    Honey Pecan Slice & Bake Cookies

    Slice and bake cookies are one of my favorites to keep around this time of year and through the cold winter months. There's something so fun about being able to grab a roll of cookie dough from the fridge, slice it into little circles, pop them on a baking sheet, and bake until golden and hot. Warm cookies straight out of the oven are perfect with a cup of hot tea, to follow up an afternoon of sledding, or to have on hand when company stops by.

    These honey pecan slice-and-bake cookies are an old recipe from my sister-in-law's aunts who grew up in Alabama where pecans and honey were readily available. I love the flavor of the nuts and honey together with the sweet butter and sugar. These simple cookies are lightly sweet, just crunchy enough, and have a mild honey flavor that compliments the nuts just right.

    You are going to love this easy recipe and make it again and again just to have something a little sweet waiting for you to bake it up.

    What is the best way to cut these cookies?

    Use a sharp knife when slicing the cookies so that you cut through the nut chunks. You'll smash the cookies and nuts to pieces if your knife isn't sharp. When cutting cookies, cut halfway and then roll dough over and finish cutting (it keeps the cookie from crumbling on the edges).

    How do I store these cookies?

    You can store these cookies, uncooked, in a log, wrapped in waxed paper and then plastic wrap in the fridge for up to 4 days or in the freezer for up to 2 months. Just let any frozen cookie dough thaw in the fridge overnight before baking.

    What other nuts can I use in this recipe?

    A soft nut, like a walnut, can be substituted for the pecans. I would not recommend a harder nut, like an almond; it would make cutting cookies to difficult.

    Description

    Honey Pecan Slice-and-Bake Cookies are easy to make with honey, pecans, and butter. Just roll, slice, bake and enjoy!


    Ingredients

    Scale
    • ½ cup honey
    • ½ cup sugar
    • ½ cup butter
    • 1 egg
    • 2 ½ cups flour
    • 1 ½ teaspoon baking powder
    • ¼ teaspoon baking soda
    • ¼ teaspoon salt
    • ¾ cup chopped pecans

    Instructions

    1. Combine honey, sugar, butter, and egg and beat until smooth.
    2. Whisk together flour, baking powder, baking soda, and salt. Add flour mixture to cream mixture.
    3. Stir in pecans.
    4.  Working with ⅓ of the dough at a time, shape into a log, 2 inches in diameter.
    5. Wrap the log in plastic wrap and chill for at least an hour or overnight.
    6. Cut into ¼ of an inch thin slices and bake at 375 for 12-15 minutes. Cookies should be lightly browned at the edges. Remove from the oven and transfer to a wire baking rack.

    • This is an old family recipe from Ivy Burke Clark.
    • Use good honey. Super cheap honey can be bitter and that will be reflected in the cookies.
