Tender and juicy pan-seared chicken thighs are combined with a creamy parmesan sauce, spinach, and tomatoes to make this luxurious creamy Tuscan chicken.
In a large skillet, brown the chicken thighs in the olive oil until they are cooked through.
Add the butter and spices. Flip the chicken a few times to ensure the thighs are fully coated.
Sprinkle in the cherry tomatoes and cook until they are softened. Then, add the spinach leaves and stir until they are saturated in the butter mixture.
Add the heavy cream and parmesan cheese. Stir until the cheese is melted into the cream. Allow the sauce to simmer until it has thickened.
