Healthy Honey Coconut Granola and Wedding Shenanigans from the weekend

Last week I took the kids on a solo trip to Idaho and Oregon for my sister’s wedding. It was a lot of fun and a whole lot more crazy. Details and pictures at the end of the post.

If you are here for the recipes though, I’ll do that first. Today I have an amazing and healthy honey coconut granola recipe for you. We love this granola! It’s one that I’ve been making for a long time and it’s a regular in my kitchen. I eat it with milk or almond milk in the morning like cold cereal, we eat it dry right out of the container for snacks, and it is excellent with yogurt and fruit for a quick snack. It is honey sweetened and made coconut-delicious from both coconut flakes and coconut oil. This recipe is a keeper, literally, it stores really well! I make a batch on Monday and it’s get for a week or two in the cabinet.

Healthy Honey Coconut Granola
 
Ingredients
  • 6 cup old-fashioned oats
  • 2 cups shredded unsweetened coconut
  • ¾ cup whole wheat flour
  • pinch salt
  • 2 Tbsp cinnamon
  • ½ cup water
  • ½ cup coconut oil, melted
  • 1 cup honey
  • 2½ Tbsp vanilla
  • 1 cup nuts, optional (I love pecans in this)
Instructions
  1. Preheat oven to 225 degrees. Line a big cookie sheet with parchment.
  2. In a large bowl combine the oats, coconut, flour, salt, and cinnamon. In a small bowl whisk together the water, coconut oil, honey, and vanilla. (If you honey is thick, use hot water or microwave it just a bit). Pour the wet ingredients over the dry ingredients. Mix everything together making sure there are no dry spots.
  3. Spread granola onto the prepared cookie sheet. The pan will be nice and full. Bake for about an hour and half total, stirring every 20 minutes to make sure everything bakes evenly. When you are stirring, don't get too crazy because you don't want to break up all of the clumps.
  4. When granola starts to turn a light golden color (about an hour into cooking) add your nuts. Continue cooking until everything is a nice golden color, taking care not to burn the nuts.
  5. The granola will still be slightly sticky when you take it out and will crisp up after it cools.
  6. Store in an airtight container.
Notes
This recipe is very forgiving. If I am feeling cheap or plain I don't add any nuts.

The plain-jane granola is excellent with yogurt and berries.

Honey burns pretty easily. If your granola is looking dark or smelling like it's burning, turn the oven down 25 degrees and take the pan out while the oven cools. Burnt honey granola isn't the best.

The hardware store is entering the final stages of completion and we are getting our first loads of opening inventory in just 2 weeks. Thomas was swamped with getting the floor competed in order to get shelving up (and he cut off the tip of his thumb right in the middle of the chaos), so he wasn’t able to go to the wedding with us like planned (instead he drove the 9 hours to Boise and home in ONE day, he’s crazy like that).

My youngest, seventeen-year-old, sister is living with us this summer, so her and I decided to head up to our oldest sister’s new house in Idaho Falls a few days before the wedding to hang out with our parents and siblings who were gathering there. It was a long 9 hour trip to her house, 4 more hours to Boise for the wedding, 3 more hours to Oregon for the reception, 7 hours back to Idaho Falls, and then it took 10 hours to get home. All this driving with 4 kids and no husband. Those facts alone make me feel like a crazy person, but wait, there’s more.

I’ve been feeling a little overwhelmed with my lack of a husband and plethora of kids lately, and here’s why.

This picture pretty much sums up how the weekend of the wedding was for me… full of family, pretties, and a whole lot of crazy! My oldest sister thinks her kids are the wild ones, but this picture is proving that theory wrong. Her’s are so nicely smiling with their matching bow ties while mine are making the oddest faces, screaming, or trying to jump in the fountain. Who’s got the crazy kids now sister? And did I mention Henry broke his nose at the luncheon.

That’s a picture of him the day after it happened, so his nose was really swollen but the bruising hadn’t settled in yet. Nine days later he’s still rocking 2 very black eyes. He was holding himself up by his arms and kind of swinging in between two tables and somehow he got his legs up and fell, breaking his fall with his nose. I was four feet from him but didn’t see it happen. When he ran to me I felt instantly sick. The cartilage in his nose was off to one side had swollen instantly. You guys, it was gut-wrenching to hold him while he screamed. I took him out to our suburban (since screaming in a restaurant is generally frowned upon) and it was so hard to get him to calm down. I ended up holding him and telling him a story I made up about him and a dragon until he fell asleep. I cried sitting in the hot car while he whimpered in his sleep. I should have noticed him playing around and asked him to stop. Lucky for me that happened in the 6 hours that Thomas was around for the wedding. It was emotionally draining and I don’t think I couldn’t have managed all of the other kids while being with Henry. I still sad that it happened, but the timing was the best that it could have been.

After a long nap he carefully went swimming in the hotel pool with all of my family and that really helped to take his mind off of the pain. That’s one story that will be retold again and again. Childhood comes with some serious battle wounds.

The trip really was great. My parents and all of my siblings were together for the first time in three years. We ate, we laughed, we hand crafted floral arraignments, and the kids got in some much needed cousin time. One of my favorite times was just talking with my mom who drove with me and the kids from Oregon to Idaho Falls. The kids were sleeping and we just chatted about dream kitchens and sewing projects I have her working on for my Etsy shop. We are two peas in a pod; it’s just a shame we live so far from each other.

  1. hahahaha, oh man I feel your pain! Earlier this year I drove 17 hours by myself with my 4 boys to visit family, then 5 hours to visit more family, and then 15 hours back home. All by myself. It was murderous, but the time spent there was so worth it! I can’t believe your son broke his nose, the poor boy! At least he has some war wounds to show off.
    Also, to make you feel better a little better-today at the firework stand my boys tried to fish all the money out of the donations jar to pay for their fireworks. yes. thank you children. Enjoy your weekend!
