It seems a little insane to mix watermelon with feta, mint, red onion and a balsamic glaze right?! It sounds like such a weird concoction but the flavors marry together in the most beautiful, tasty way.
Watermelon Feta Salad
Watermelon is a summer staple. I love this recipe because it takes everyone’s favorite summer fruit and puts a fun spin on it. Watermelon feta salad goes great as a side dish for a BBQ, potluck or summer parties. Try it with some of my other great sides like baked mac & cheese , pasta salad , and butterbeer.
To make this salad you will want to find the best watermelon possible. Look for a watermelon that has a yellow spot on the outside. This is known as the field spot and where the watermelon was laying on the ground. A yellow field spot indicates that it ripened longer on the vine whereas a white spot shows that it was picked too soon and won’t be ripe enough.

- Watermelon: the star of the show so make sure it’s fresh, crisp, and sweet
- Red onion: red onion tends to be a little more mild than white and yellow onion, though you could use a sweet onion here instead.

How to make watermelon salad:
- Give that watermelon a chop, I like pretty small pieces so that it feels like a salad and is easy to eat, go for 1 inch cubes.
- Chop up your mint and onion (thin slices here!)
- Add those to a dish and add the feta cheese.
- Salt the dish and drizzle with balsamic glaze.
- Stir together, give it a taste, adjust all of the ingredients to your liking.
- Enjoy right away.

Need help picking the right watermelon? The old trick of knocking on the watermelon is a good tip for picking a great tasting melon, if you know what you’re listening for! When you knock the melon you want to hear a deep, hollow sound. If you hear that sound, it means the watermelon has more water and will mostly likely be more ripe. If you hear a light ping instead that is usually a sign the watermelon is underripe.

Watermelon Feta Salad
Ingredients
- 8 cups cubed watermelon, (1 inch cubes)
- 1/2 cup thinly sliced red onion
- 1/2 cup feta cheese
- 1/3 cup finely chopped fresh mint leaves
- 1/4 teaspoon salt or to taste
- balsamic glaze, (about 1/4 cup)
Instructions
- Add the watermelon, onion, feta, and mint to a large bowl and toss lightly.
- Sprinkle evenly with the salt and drizzle the balsamic glaze evenly over the salad.
- Adjust the salt and balsamic glaze to taste.
- Serve right away.
- This salad is so open for you to play with. You can add more or less of any of the ingredients that you’d like.
Notes
- Feel free to switch the mint leaves to basil if you’d like and add a cup or two of chopped cucumber to the salad. There’s lots of options here!
