  • 1 cup freshly chopped spinach
  • ½ tablespoon dried dill
  • 1 cup sour cream
  • 1 ½ cups mayo

  • If you don’t have sour cream then you can use plain greek yogurt. Just make sure it is plain greek yogurt, not vanilla!
  • I prefer the texture and flavor of freshly chopped spinach, but this really comes down to personal preference. You can use one cup of steamed spinach instead of fresh spinach, or one 10-ounce package of frozen spinach that has been squeezed and drained really well.
Add More Vegetables: To bump up the veggie intake, you can add finely chopped green onions, water chestnuts for crunch, or even artichoke hearts to create a spinach artichoke variation. Just ensure any additions are well-drained to maintain the creamy consistency.
