Summer is slipping by fast and the world seems to be ready for apple and pumpkin recipes already. I’m sitting over here in the corner yelling, “But my garden is still producing like crazy! What about that zucchini? That tomato? That cucumber recipe! Waaaait!” So in a personal effort to prolong summer just a bit I’m going to go ahead and post some awesome recipes that feature summer’s bounty. Sure I love me some apple and pumpkin, but I’m just not there yet! Can’t we wait just a few more weeks? In my mind you can’t get more summery than a delicious cucumber sandwich, and that’s just what I have to share today.

A cucumber sandwich is just what a summer lunch should be – light, tangy, fresh, and airy. I look forward to my first cucumbers because I just can’t wait to make this. This also makes a great appetizer or finger food for a party (baby show must have in my mind!), just use those tiny pieces of rye bread instead of a standard loaf and you’ll have yourself an adorable little sandwich (great for finger foods at a party or baby shower).

Tips and Tricks for Making the BEST Cucumber Sandwich

  • I love rye bread because it has great texture and adds a lot of flavor. Good options for bread include Jewish Rye, marbled Rye, and pumpernickel. Toasted or untoasted, you choose.
  • If you aren’t up for making your own herbed cream cheese, the chive and onion cream cheese spread from the store is great on this.
  • That being said, you can use whatever herbs you love and have on hand too. It’s great with fresh dill and/or parsley chopped up and stirred into the cream cheese mixture as well.
  • You can use all kinds of cucumber for this recipe. I just use what I have in the garden! English, Kirby, and most any other kind work well. I like to remove the skin if it’s thick or tough.

Ingredients

  • 4 ounces cream cheese
  • 1 green onion, green part only chopped
  • dash of garlic and onion powder, and salt and pepper to taste
  • 4 slices of rye bread
  • 1 cucumber sliced

Instructions

  1. Add the cream cheese, green onion, and seasons to a small bowl and combine well with a fork.
  2. Adjust seasoning to taste. Toast (if you like) the rye bread.
  3. Spread 1/4 of the cream cheese mixture (or less if you like…) on the toasted bread and top with sliced cucumbers.
  4. Add salt and pepper to taste and enjoy!

Notes

  • There are lots of kinds of rye bread. I really like Russian Rye just FYI.
  • You can use reduced-fat cream cheese if you like here, it tastes just as creamy.

Make a thin layer of cream cheese on the bread so that the cucumber aren't touching the bread. This will help it to not get soggy.

Can you freeze cucumber sandwiches?

Nope, cucumber sandwiches will not freeze well. The freezer will make the cucumbers soft and mushy if they are frozen.

Can you put cucumber sandwiches in the fridge overnight?

Yes! BUT if you want to make these head, you can keep the cucumbers and the bread with cream cheese separate. I wouldn't but the two together until you are ready to serve.
