This Creamy Cilantro Lime Dressing is absolutely divine on just about everything from tacos to salads, and it takes less than 5 minutes to make.
  • If you’re not a mayo lover, you can substitute sour cream or Greek yogurt. It won’t be exactly the same but it will be close. However, if you don’t like the flavor of mayo, this dressing is flavorful enough that you won’t be able to taste it, much like a homemade ranch dressing.
  • If you’re one of those people who doesn’t like cilantro, you may not mind it in this because of the mixture of flavors. If you find it still tastes too “soapy” to you though, you can substitute the same amount of fresh parsley.

What do you do if your dressing is too thin or too thick?

If your dressing is too thin, add some more mayo or even a spoonful or two of sour cream. If it’s too thick, blend in some more salsa or buttermilk to thin it out.

Expert Tips

  • This is one of those recipes where fresh ingredients really matter. Use fresh squeezed lime juice and fresh cilantro. The bottled and dried stuff will just not be the same.
  • The flavor of this dressing is best if you can let it sit for a little while before using, even 30 minutes beforehand but ideally earlier in the day or the day before.
  • Feel free to experiment with add-ins – a little roasted garlic or a little diced jalapeno for kick would be delicious!

Ingredients 

  • 1 small can salsa verde, 7 ounces or about 2/3 cup
  • 1 cup mayo
  • 1/2 a bunch cilantro
  • Juice and zest from 2 limes
  • 1 clove garlic
  • 1 tablespoon dried parsley
  • 2 teaspoons homemade taco seasoning
  • Salt and pepper to taste

Instructions 

  • Add all of the ingredients to the jar of your blender, and blend until smooth.
  • If the mixture is too thick, add a bit more salsa or a bit of buttermilk.
  • If the mixture is too thin, add more mayo or even some sour cream.
  • Serve on all the things.
  • Store extras in an airtight container in the fridge (such as a mason jar with a lid).
  • Use within 10 days.

Notes

  • If you like a little heat, add a jalapeno with the seeds removed.
  • If you like a lot of heat, add two whole jalapenos with the seeds. Blend it up and go!
  • For best flavor, make the dressing at least 30 minutes ahead of time.
  • Use a salsa verde that you like to eat – it’s an important flavor in this recipe.
