Super Small Batch – Chocolate Chip Cookies

Being pregnant means cravings for me…  I’ll be the first to admit when I have a hankerin’ that I just can’t shake.  In the early stages it was Subway, later Chili’s salsa, homemade Chinese food, and now sugar!  We try so hard to be healthy, but when you need a chocolate chip cookie, you NEED the real deal!  So I found a recipe online for super small batch of cookies.  It made 7 cookies the first time I made it and 9 the next time (less dough snitching?).  Anyways, it was fun to make and then I could move on with my day without eating the whole normal sized batch!
The fun thing about this recipe was not just the size, but the cookies turned out REALLY well!  I mean, they were super pretty and really good!
Small Batch Chocolate Chip Cookies
2 T. plus 2 t. butter at room temperature
2 T. brown sugar
2 T. granulated sugar
2 T. egg, well beaten (beat an egg, then measure out 2 T.)
1/4 t. vanilla
1/4 c. plus 2 T flour
scant 1/4 t. baking soda
1/8 t. salt
1/3 c. chocolate chips
Cream together the butter and sugars using a fork.  Mix in the eggs and vanilla, stir in the dry ingredients, then the chips. Spoon onto a baking sheet, plan on 6 to 8 cookies.
Bake at 375 for 8-11 minutes.
