👩‍🍳 The homemade gravy made with beef broth, Worcestershire sauce, and sautéed mushrooms creates an incredibly flavorful sauce that takes this dish from ordinary to something special!

My 2 Best Tips For Making Chopped Steak

Use Any Ground Beef: When it comes to the fat percentage of your ground beef, anything will work. I’ve tested this recipe with both 85/15 and 93/7, and both worked great. I did need to remove a few spoonfuls of grease before starting on the sauce with the 85/15.

Feel free to use whatever ground beef you have on hand or prefer and just remove a bit of the grease after browning the steaks if needed!

Panko Breadcrumbs: I highly recommend using panko breadcrumbs in these ground beef steaks. They are crunchier than regular breadcrumbs, and this resulted in a much better texture than when I tried it with homemade breadcrumbs from slices of bread.

If you must use a substitute for the panko, toast the breadcrumbs first to get them a bit crunchier.

Making an old-fashioned simple meal like chopped steaks is the very definition of comfort food. I bet your Grandma had her own version of this dish, too!

Take plain old ground beef, mix in some common pantry staples, and you’ll end up with a flavorful chopped steak with mushrooms, onions, and a rich brown gravy.

It’s a great diner style meal that is basic but so yummy, and it’s more affordable, too!

Ingredients

  • 1 pound ground beef
  • ¼ cup panko breadcrumbs
  • 1 tablespoon olive oil
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 cup sliced brown mushrooms
  • 1 cup diced white onion
  • 3 tablespoons flour
  • 1 tablespoon worcestershire sauce
  • 1 ½ cups beef broth

Instructions

  • Combine your ground beef, breadcrumbs, olive oil, salt, pepper, and garlic powder in a large mixing bowl. Use your hands to work the ingredients together until fully combined. Break the ground beef into 4 equally sized balls.
  • Heat a large pan or cast iron skillet over medium-high heat for a few minutes. Flatten the balls of ground beef into discs about 1 ½ inches thick. Cook the patties for about 4-5 minutes per side, or until they have browned.
  • Remove the chopped steaks from the pan. Add the diced onion and mushrooms. Cook for about 5 minutes, or until softened.
  • Add the flour, Worcestershire sauce, and beef broth. Let the sauce simmer for about 10 minutes, stirring occasionally. (You can add the browned beef steaks to the sauce after it's cooked a few minutes and has started to thicken.)
  • Taste sauce and salt and pepper if needed. Spoon the sauce over the chopped steaks and enjoy!

Notes

Recipe Variations & Substitutions:
  • You can replace your ground beef with ground sirloin.
  • I used unseasoned panko breadcrumbs, but I think Italian seasoned ones would also be amazing!
  • White mushrooms can be subbed in for the brown mushrooms — I just thought the brown paired perfectly with the earthy flavor of the beef and savoriness of the Worcestershire sauce.
Serving Suggestions: My family’s favorite way to eat these savory ground beef steaks is over homemade mashed potatoes with the awesome sauce with the mushrooms and onions covering the whole mound!
Storing & Reheating Leftovers: These chopped steaks are best served fresh, but you can store any leftovers in the fridge for up to 4 days. You can store the steaks and sauce separately or in the same container. Reheat a steak and some sauce in the microwave for 45-60 seconds.

Recipe FAQs

Can I make chopped steak ahead of time?

Yes! You can form the patties up to 24 hours in advance and store them covered in the refrigerator. The cooked chopped steak with sauce can be stored for up to 4 days in the fridge and reheated in the microwave for 45-60 seconds.

What ground beef fat percentage works best for chopped steak?

Both 85/15 and 93/7 ground beef work well in this recipe. The 85/15 provides more flavor and juiciness but may require draining excess grease before making the sauce. Choose based on your preference for richness versus leanness.

Can I substitute the mushrooms in the chopped steak gravy?

Of course! While brown mushrooms provide an earthy flavor that pairs perfectly with beef, you can use white mushrooms, cremini, or even omit them entirely if preferred. The gravy will still be delicious.
