Whether you’ve picked too many at the u-pick farm or found an amazing deal at the grocery store, these preservation methods will ensure none of your precious strawberries go to waste the next time summer rolls around!

When To Harvest Strawberries
They should be harvested when fully red.
How To Store Strawberries
Store fresh strawberries in the refrigerator.
Dehydrating Strawberries
- CUT: Wash and drain
- DIPPING: No treatment necessary
- DEHYDRATOR: 24-36 hours
- APPEARANCE WHEN DRY: pliable, leathery
Canning Strawberries
QUANTITY: 7.5-9 pounds
PREPARE STRAWBERRIES:
- Wash strawberries under cold water; drain.
- Remove stems and caps.
- Leave strawberries whole.
CANNING STRAWBERRIES:
- Measure strawberries. For each quart of strawberries, measure 1⁄2 cup sugar.
- Combine strawberries and sugar in a large saucepan, stirring to coat strawberries with sugar.
- Let stand in refrigerator 5 to 6 hours.
- Heat strawberry mixture slowly over medium heat, stirring to prevent sticking, until sugar dissolves and strawberries are hot throughout.
- Pack hot strawberries and juice into a hot jar, leaving 1⁄2-inch headspace.
- Remove air bubbles.
- Clean jar rim. Adjust lids.
- Process in a Boiling Water Bath – 10 minutes for pints, 15 minutes for quarts.

Freezing Strawberries
PREPARING STRAWBERRIES
- Select fully ripe, firm berries with a deep red color.
- Discard immature and defective fruit.
- Wash and remove caps.
WHOLE BERRIES SYRUP PACK
- Put berries into containers and cover with cold 50 percent syrup, leaving headspace.
- Seal and freeze.
WHOLE BERRIES SUGAR PACK
- Add 3⁄4 cup sugar to 1 quart (1-1/3 pounds) strawberries and mix thoroughly.
- Stir until most of the sugar is dissolved or let stand for 15 minutes.
- Put into containers, leaving headspace.
- Seal and freeze.
SLICED OR CRUSHED
- Prepare for packing as for whole strawberries; then slice or crush partially or completely.
- To 1 quart (1-1/3 pounds) berries add 3⁄4 cup sugar; mix thoroughly.
- Stir until most of the sugar is dissolved or let stand for 15 minutes.
- Pack into containers, leaving headspace.
- Seal and freeze.

Expert Tips
- Storage Time: Storage time always depends on processing method! Frozen strawberries last 8-12 months, dehydrated strawberries keep for 6-12 months, canned strawberries stay good for 1-2 years, and properly made strawberry jam can last up to 2 years when stored correctly.
- Proper Pretreating: For methods like dehydrating or canning, briefly dip strawberries in a solution of lemon juice and water (1 tablespoon lemon juice per cup of water) to help maintain their vibrant red color and prevent browning.
- Removing Green Tops: For most preservation methods, it’s best to remove the hulls (green tops) first. However, for freezing whole strawberries that you’ll use in smoothies, you can leave the tops on. Just remember to remove them before eating or using in recipes.
