This Applesauce Coffee Cake features a buttery crumb topping and stays incredibly moist thanks to unsweetened applesauce. Perfect for breakfast or dessert!
Preheat the oven to 350° F. Spray an 8×8-inch baking dish with nonstick spray.
In a small bowl, combine the sugar, flour, cinnamon, and melted butter for the crumb topping. Mix until crumbly and set aside.

In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.

In a large bowl, beat the butter and sugar until blended. Add the egg and applesauce and mix until smooth.

Add the dry ingredients to the wet ingredients and mix just until combined.
Spread the batter evenly into the prepared pan and sprinkle the crumb topping evenly over the batter.
Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
Let cool for at least 15 minutes before slicing and serving.

Prevent Over-Browning: If the crumb topping starts to brown too quickly, loosely tent the pan with foil for the last 10 minutes of baking.Add Mix-Ins: This cake has lots of flexibility! You can add a 1/2 cup of raisins or other dried fruit if you'd like. You can also add 1/2 cup of chopped nuts.Customize the Spices: This is a great recipe to adjust the spices also, you can add some nutmeg, ginger, or cloves if you'd like (about 1/4 teaspoon each).Double the Recipe: This recipe doubles well for a 13x9-inch pan; you'll want to cook for around 60 minutes.
