While the butter is melting, whisk together the eggs and 3-4 drops of green food coloring. Dice the ham and set it aside.
Pour the eggs into the heated pan and stir continuously until the eggs are about halfway done cooking.
Add the ham and continue stirring until the eggs are fully cooked.
Salt and pepper to taste. Serve and enjoy!
Notes
This dish is best served fresh. I don’t recommend trying to store any leftovers.
For some extra flavor, you can add some cheese to this recipe. You can add cheddar, Colby jack, pepper jack, etc.
Whisking your eggs together with the food coloring helps keep the green color nice and even. Whisking the eggs also helps them scramble better and cook evenly.
You can use either salted or unsalted butter in this recipe.
I prefer to use liquid food coloring as opposed to gel food dye.
