Glazed carrots are the perfect side to please anyone. Cook to your liking, they have the wonderful flavor of carrot, the sweetness of the maple syrup and get them off the skillet earlier and they still have the slight crunch that makes carrots so delicious.
1poundcarrotspeeled and sliced. (I cut mine in ¼ inch-thick slices, some diagonally, some straight for a fun texture.)
¾cupcold water
¼teaspoonsalt
¼teaspoonground black pepper
¼cup½ stick salted butter, you can use unsalted
¼cuplight brown sugarpacked
2tablespoonsmaple syrup
2teaspoonsfresh lemon juice
Instructions
Clean and peel the carrots.
Slice the carrots into ¼-inch thick slices. Cut straight for a circle or diagonal for more of an oval shape bite.
Place the carrot slices into an 8 or 10-inch skillet. Add water, salt, and ground black pepper.
Over medium-high heat, bring to a boil, stirring often. approximately 10 minutes. The carrots should be tender but still have a slight crispiness.
Drain the water.
Add the butter, brown sugar, and maple syrup.
Over medium heat, using a heat-proof spoon, mix and bring to a boil.
Reduce to a simmer and let the sauce thicken up and coat the carrots. Cook for 8 to 10 minutes until the carrots are nicely coated and have reached the desired doneness.

Notes
Make sure to cut all the carrots to the same thickness, as much as you can. This way they will cook more evenly.
Glazed carrots are a great side dish when served with a rice or beef main course.
Storage: Store in an airtight container in the fridge for 2 days.
Re-warm: You can rewarm in the microwave, but I did mine in the air fryer. It adds a layer of crisp and still a nice sweet flavor to it.
