01 instant yeast
02 granulated sugar
03 olive oil
04 kosher salt
05 bread flour
06 egg white
Add water, yeast and sugar and let rest for 5 minutes. Add oil, salt & flour and stir. Mix dough for 5 minutes. Then gradually start to add more flour until starts to pull away from sides of the bowl. Knead another 3 minutes.
Remove dough from bowl and place on lightly floured surface. Knead until dough is barely tacky. Form dough into a bowl and add back to bowl. Cover with a damp towel and let rest for 30-45 minutes.
Add parchment paper to 2 baking sheets. Divide dough into 8 even pieces. Shape into a smooth ball and place 4 evenly spaced balls per baking sheet
Cover & let rise another 30-45 minutes. Preheat oven to 400 and make an egg wash. Cut small X into each bread bowl and then brush each one with the milk mixture.
Bake on two separate racks for 30 minutes, rotating the pans from the upper rack to the lower rack half way through. Allow to cool for 15 minutes before cutting open to serve.
