You can also use Yukon gold or baby red potatoes. Just make sure you have about 4 cups of diced potatoes.
You can use both salted and unsalted butter in this recipe. If you are using unsalted butter then you might want to add 1/2 teaspoon of salt to your potatoes, especially if you are using sweeter Yukon gold potatoes.
The butter can be replaced with coconut or olive oil.
