If you haven’t already, use a sharp knife or mandolin to thinly slice your sweet potatoes.
Add your sliced potatoes to a bowl or cold water and allow them to sit for 30 minutes.
Transfer the potatoes to a kitchen towel and pat them dry. Once dried, toss the potatoes in the salt, pepper, and olive oil.
Dump half of the potatoes into the air fryer basket and cook for 11 minutes. Repeat with the remaining potatoes.

It is important to note that sweet potato chips will not crisp up as much as chips made with russet potatoes.
The thinner you slice your sweet potatoes the better they will crisp up and the quicker they will cook. If you have one, it is easiest to use a mandolin.
Be sure to evenly coat your sliced potatoes in oil so that they cook evenly and crisp up as much as possible.
It is important to pat your potatoes dry as much as you can so they don’t have any excess moisture. Too much moisture will leave you with soggy chips.
Store your chips in an airtight container for up to 5 days on the counter.
