Hearty mushrooms, sharp parmesan cheese, and decadent rice combine in this mushroom risotto to create a creamy dish that will be a hit with any crowd.
Melt the butter over medium heat and then add the mushrooms. Allow the mushrooms to cook until soft and tender.
Once the mushrooms are soft, place them in a bowl and heat the olive oil in the pan. Cook the rice for about a minute and then add the beef broth one cup at a time.
Once the broth is absorbed, continue adding another cup followed by the water.
Add the mushrooms back to the pan along with the parmesan cheese. Stir to combine.
