I was disappointed that the frosting doesn’t keep a couple days. For two people we just can’t eat a whole cake that fast! I didn’t see this note until the end of the recipe and I already had it mixed up. It looks and tastes great though!

Made today but used 1/4 c pure maple syrup and corn syrup to equal 2/3 cup with coconut extract topping with sprinkles and toasted coconut. Tastes amazing.

So it doesn’t store well I see, but my question is.. if I frost the cupcakes and put them in the fridge, will the frosting still stay in that form??
