Vegetable Lo  Mein Recipe

Vegetable Lo Mein is a popular Chinese dish that combines flavorful noodles, crisp vegetables, and a savory sauce to create a meal that is both delicious and versatile.


Start by cooking the noodles according to the package instructions. Drain and set them aside. In a small bowl or mason jar, mix together soy sauce, sesame oil, sugar, and vinegar.


In a large skillet or wok over medium heat, add light oil and sauté the white parts of green onions, bell pepper, and snow peas until tender-crisp.


Then, add coleslaw mix and cook for an additional 2 minutes. Incorporate the reserved noodles and stir to combine.


Pour the soy sauce mixture into the pan, stir well, and remove from heat. Adjust the saltiness with soy sauce if needed.


Serve the vegetable lo mein topped with green onion (green parts) and cashews or peanuts.
