Chicken Kabobs combine succulent pieces of marinated chicken, fresh vegetables, and a medley of spices, all skewered and cooked to perfection.
Preheat the oven and dice up the chicken breast. Make sure the chicken and the vegetables are about the same size.
In a medium-sized bowl, combine the chicken, Italian seasoning, garlic powder, and half of the olive oil. Mix until the chicken is evenly coated.
Thread the chicken and veggies onto 12 wooden skewers, leaving 2-3 inches open on both ends.
Grease two baking sheets with the remaining olive oil. Place the skewers on the baking sheets and bake for 28 minutes.
Season the skewers with salt and pepper to taste. Serve and enjoy!
