Preheat oven to 425°F and prepare a 12-cup muffin tin with butter or paper liners.
In a large bowl, cream together room temperature butter and sugar until fluffy. Gradually add the beaten egg, mixing until well combined.
In another bowl, sift the flour, baking powder, salt, and cinnamon together.
Alternate adding dry ingredients and milk to the butter mixture in three parts, beginning and ending with dry. Gently fold in cubed apples.
Fill muffin cups ⅔ full and bake for 15-20 minutes or until a toothpick is clean. Cool in the tin for 5 minutes, then transfer to a rack.
