I used to bake them like my mother - slather them in Crisco, stick a knife in the center and bake at 350 degrees for an hour. If the potato was too large, it was undercooked. I did try subbing olive oil for butter in this recipe but it just wasn&#039;t the same. And poke it ALL OVER and MANY TIMES with that fork. It lets the steam out and allows it to cook evenly.]]></description>

I tried it with both and found them to be really similar. Holes release some of the steam and moisture and no holes trap it inside. I think the holes and a little release of the moisture lends to a fluffier potato center in the middle which I prefer though both work and both are delicious.]]></description>
