I like to use the mixer because it&#039;s really developing that gluten quickly because the rye flour is dense and not gluten-y, if you are going to do my fool proof method I&#039;d really work the dough well the first time you mix it together (take it out and knead it by hand well) and then do that again after the hour rest period (take it out and knead it by hand a few minutes, more than just once around the bowl), that should work just fine!]]></description>
