In reply to Esther Dillard Vickers. You'd really need to work that dough if you are doing it by hand and I have not tried it with that long of a cold ferment, I'm not sure how that'll go.

If you don’t have a stand-up mixer, can a hand mixer work or a bread dough stirring tool? I’m going to be making these for a Thanksgiving family meal and I planned on the first rise to slow the rise in the refrigerator for 2 days. Is that okay? I’ve been making your bread since covid and appreciate its simplicity greatly. Looking forward to trying the rolls.

This is one of the easiest and most fluffy and flavorful sourdough rolls recipe I have made! It is now my favorite! No need to try other recipes. I like that I can use my kitchen aide mixer and dough hook which develops the gluten. Thank you!!!!

In reply to Amy. No, if I'm freezing dough I freeze shaped after the first rise and then let it do the second rise after it thaws.

In reply to Stacy Craft. Yep, the frozen dough just takes a long time to get warm and proof again but you can do it, the frozen rolls are lovely.
