    Slow Cooker Pork Tacos with all the extras

    Happy Holiday to you! If you aren't in the mood for burgers and hot dogs tonight, this might just be up your alley. Throw the meat in the crock pot right now and it will be ready for dinner. Fresh garden tomatoes for the salsa will really put it over the top. Are you hungry yet?

    We eat Mexican-inspired food at least once a week and then the kids and I gobble up the leftovers for lunch the next day. I never ever get tired of eating things with rice, beans, and salsa.

    A few months ago I shared all of my Cafe Rio knock-off recipes, and today I thought I'd highlight them in pork tacos. The recipes make big batches. The night that I make everything we have burritos, another night we'll have pork tacos, and then if there are still leftovers we'll make salads too. They are such great recipes to try.

    Slow Cooker Pork Tacos
    One recipe Cafe Rio Sweet Pork Barbacoa
    Shredded lettuce
    Shredded Cheese
    One recipe fresh tomato salsa
    Optional sour cream and/or hot sauce
    Small flour tortilla
    Load warmed tortillas up with hot pork from the crock pot (or reheated if using leftover from pork burrito night). Top with shredded cheese, lettuce, and fresh salsa. Add a little sour cream or hot sauce if you like them.
    Serve with a side of cilantro lime rice and garlic black beans.
    Repeat. Repeat.
    Notes:
    The pork freezes really well. If you make it and don't want to use it the rest of the week just freeze it until you are ready for Mexican food and then half the work will be done.
