Jan, I love that you used that sauce over rice and it does stay pretty thin (a lot of it depends on how much water was in your chicken!) you can always add it to a saucepan and cook it with cornstarch to thicken on the stove. So glad you liked it!

Made this last night, and it was fantastic. Very easy to put together, and SO delicious. My slow cooker doesn't have a 2 hour setting, so I had to use 4 hours, but that was no problem. The chicken came out tender and moist. But the best part was the bright, lemony, creamy sauce. It was fantastic served over rice. And with some nice fresh spring peas as the veggie along side, a perfect meal. My only question is how I could get it to thicken more. I used extra corn starch, and it still didn't get that thick. Perhaps I checked it too often! But no matter, it was absolutely delicious, and both my husband and I loved it. Will definitely keep this on my dinner rotation.

You can totally skip it, I'd stir in some additional cornstarch to add to some of that creaminess and thickness at the end!

Hi Melissa! Do you have to add the cream or can you skip it? I can’t have dairy and I was wondering if you think this chicken would be good without the cream. I often substitute full-fat coconut milk but I am not sure how that would be with the lemon. I know the sauce wouldn’t be the same but wanted to see what you thought for dairy-free alternatives. Thanks!
