With only two of us in the house, I needed a smaller bread recipe. This one was perfect! It fit in my sandwich loaf pan and came out great. As promised, it is delicious and soft. Thanks! I’ll be using this one regularly.

I was searching all over the Internet for a simple zucchini cornbread recipe, and found this perfect recipe!

I have a question: should there be 2 cups of shredded zucchini *before* wringing out the water, or is it 2 cups *after* wringing out the water? I’m excited to make this tomorrow (so much garden squash & zucchini!)–I’ll let you know how it goes.

Wow! It’s amazing how a few little ingredient changes can transform a recipe! This bread is so soft and delicious and it real stays that way for days.
