    Party Cupcakes

    I had a tough time deciding what to take to the class reunion last week. There were some big contenders on my list and you all helped me narrow down my choices.  I went with cupcakes. I love them, they are relativly easy, and they just look pretty. 

    Here's the breakdown

    Vanilla Vanilla
    Chocolate Chocolate
    Chocolate Peanut Butter

    I used Brown Eyed Baker's recipe for the vanilla cake found HERE. They were really good. My only beef was the recipe says it makes 12 cupcakes, but it should have made more like 14. I knew when I was filling the cups that they were too full and then I ended up with cupcakes that had muffin tops. I hate cupcakes with muffin tops! They don't come out of the pan nicely and they just don't look as good, even when frosted.

    My classic vanilla butter cream went on the vanilla cupcakes.

    For the chocolate cupcakes I spruced up a box of cake mix with 1 cup of oil, 4 eggs, 1 cup of sour cream, and ½ cup of milk (ignore the ingredients on the back of the box).

    My classic chocolate butter cream for cupcakes went on top, and I still have no recipe quite yet for the peanut butter frosting.

    And today I'm having a garage sale at my house. My, what a lot of work it is, but hopefully some monetary return on my time will be forthcoming. 🙂 I see a dinner out in my future. If you are in the area stop by... and buy!
