In reply to Vicki. Hmmm, I don't have great luck cooking rice in the slow cooker, I think it's the temperature variations (mine is pretty hot in the back) but I feel like if you stirred it occasionally it would. Feel free to try it! I'd love to know if you do Vicki!

This was amazing! So rich but not too heavy. The perfect comfort food! We put the lime, coconut, cilantro and green onions in little bowls so each person could customize their garnishes.

i first tried this recipe months ago when i first started cooking… it was easy and convenient. my family loved it. ever since then they’re always asking me to make it. even now that I’m a much more experienced cook its a dish i love making and that my family enjoys. I’ve found too that using cream of coconut gives it a nice flavor. adding yogurt/sour cream with capers too? even better. thank you so much for this lovely recipe
