Mediterranean Salad with Roasted Chickpeas

Filled with roasted chickpeas, cucumbers, olives, and artichoke hearts, this Mediterranean Salad is sure to be a favorite.



For the roasted chickpeas

  • 1 can chickpeas (garbanzo beans), 15-ounces
  • 2 tablespoons olive oil
  • 1/2 teaspoon EACH kosher salt, garlic powder, black pepper

For the salad

  • 45 cups salad greens (baby spinach, baby kale, Swiss chard, and/or Romaine are all great)
  • Roasted chickpeas
  • 1 cup grape tomato halves
  • 1 cup sliced cucumber
  • 1/2 to 1 cup kalamata olives (pitted)
  • 1/2 to 1 cup bottled artichoke hearts, drained
  • Vinaigrette or roasted garlic dressing for serving


For the roasted chickpeas

  1. Preheat the oven to 400 degrees. Drain the chickpeas and then give them a good rinse with cold water. Place them on a layer of paper towel and use another paper towel to blot of some of the extra water.
  2. Place the chickpeas in a small bowl and add the olive oil. Give the chickpeas a stir so that the oil coats them well. Add the salt, garlic, and pepper and stir again to combine.
  3. Place the seasoned chickpeas on a baking sheet and bake for 20-30 minutes, stirring every 10 minutes, until the outside is crispy and darkened and the inside is creamy. Remove from the oven and let them cool at least 10 minutes before adding them to the salad.

To assemble the salad

  1. Place your greens on the bottom of your serving dish. Place the roasted chickpeas, tomatoes, cucumber, olives, and artichokes on top. Serve with your favorite dressing. I recommend a classic vinaigrette or roasted garlic dressing (both are linked to in the post).


This would also be excellent with the addition of feta cheese.
