Lemon Filled Shortbread Cookies with White Chocolate and Lemon Sugar

Here are slacker cookies number two (you might also like some store bought cookies with chocolate and ginger from yesterday if you are in a slacker mood.) These were super good and I’m so glad I thought of them. Just start with a store-bought shortbread cookie, add some lemon cream filling, drizzle with some white chocolate and then sprinkle with lemon sugar. No baking needed. Adding a little to the already made cookie really makes them fancy. I do love fancy.These lasted very well and I actually sent a bunch of these out in the mail to loved ones and friends near and far. I thought they would be perfect with a cup of tea for my grandma, and I knew my lemon loving brother would appreciate them as well.

They’d be the perfect thing to sneak into The Hobbit today too, if you are into sneaking treats and all. Thomas and I haven’t watched a movie in the theaters since The Pursuit of Happiness came out! I think we are going to go down to St. George, pawn the babies off on Grandma, and hit a matinee! Bring on the popcorn, I’ll bring the cookies.

For this creation I picked up Leibniz – Fine European Butter “Biscuits”. They were a very plain shortbread cookie; a perfect candidate for a little adding to. The texture and flavor of the finished cookie was really good the day after I made them, so if you have the time, let them sit! Any shortbread or plain butter cookie should work for this recipe if you can’t find this exact brand.

Lemon Filled Shortbread Cookies with White Chocolate and Lemon Sugar

1 package plain shortbread or butter cookies
Lemon filling
White chocolate – 2 ounces
Lemon sugar*

For the lemon filling:

1/4 cup butter, at room temperature
1 lemon, juice and zest
2 to 2 1/2 cups powdered sugar

To make the lemon filling beat the butter, juice and zest from one lemon, and 2 cups of powdered sugar on high for 2 to 3 minutes until light and fluffy. The filling should be a medium consistency.  If it is too thin add more powdered sugar and remix. If it is too thick add a bit of milk or cream and remix.

Place the lemon filling in a pastry bag fitted with a wide-open tip. Squeeze the filling onto one cookie keeping 1/4 inch from the edge and allowing the filling to be 1/4 inch thick. Place another cookie on top of the filling and press the two cookies together until the filling comes just to the edge. Repeat with the remaining cookies.

Place the cookie sandwiches on a piece of wax paper. In a 2-cup glass measuring cup melt the white chocolate in the microwave until smooth, stopping and stirring often. Drizzle the melted chocolate over the top of the cookies. Sprinkle the cookies with lemon sugar while the chocolate is still melty. Allow the chocolate to set completely before eating.

*Lemon sugar can be made by adding the zest of one lemon to 1/2 cup granulated sugar (coarse sugar is very nice for this purpose). It can also be made by adding a few drops of lemon oil to 1/2 cup of granulated sugar. The taste improves with time. If you have the time allow the lemon and sugar to sit overnight before using. Store any leftovers in an airtight container and use to sprinkle on your next batch of lemon cupcakes or on top of blueberry  muffins.

Notes: If the cookies have words/logos pressed in them just be sure to put that side on the inside.
The texture and flavor of these cookies improved greatly with time. Allow them to sit overnight if you can. I put lots of these in the mail because they did store so well.

so did you see the movie? Longest movie ever for me! Even after I woke up from my short nap during it there was still SO much movie after! But it was visually stimulating nonetheless!
