Leftover Turkey TaquitosChristmas Eve is all about the appetizers and finger foods in our family. It’s a fun and easy way for everyone to bring a few little things and no one to be stuck in the kitchen all day. When your family owns the grocery store in town (and lots of them work there too), days like Christmas Eve are busy at the store. No one has time to make a huge formal Christmas Eve dinner. Plus, when you have a bunch of different dishes, there’s something everyone loves and eats. That’s a nice perk when you have a lot of little kids in the family. I’m planning on making my Honey Teriyaki Meatballs (made in the slow cooker, yes!), bean dip because we all love it, and hopefully these Leftover Turkey Taquitos (and if I’m careful they all can be gluten-free for my father-in-law). Plus some kind of dessert, which I haven’t decided on yet (any suggestions?).

If appetizers aren’t your Christmas Eve tradition, then plan on making these taquitos sometime over Christmas break. They are a really fun to make and eat and are excellent! Any kids home from school will be super impressed. Plus, they only take about 10 minutes to put together, plus frying time. Movie night taquitos are sounding really good to me! You can’t beat using meat that’s already cooked, too. No turkey on hand? Just about any shredded cooked meat will work- chicken, pork, or lamb.

Yahoo! has a great DIY content section that they want you to know about. I picked an article they had on their site, and used it as inspiration for my own post. They posted a video tutorial and recipe for their leftover turkey taquitos, and that’s where I got the idea. Their recipe is a bit fancier than mine, but it looked delicious. And they had a really smart way to roll and then secure the taquitos so that they didn’t unroll during cooking. If you look along the top, you can find all kinds of tabs on articles that Yahoo! has for you to enjoy. I kind of think of Yahoo! just as a search engine to get you to other people’s content, so it was fun to learn and see that they actually have a lot of really great articles on their site.

Description

Your family will love these easy finger food taquitos made with leftover turkey. No turkey on hand? Just about any shredded cooked meat will work – chicken, pork, or lamb.


Ingredients

Scale
  • 2 cups left over cooked turkey, chopped
  • 1/4 cup chopped green onion
  • 2 ounces cream cheese
  • 2 tablespoons sour cream
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 4 ounces sharp cheddar, shredded
  • 68 corn tortillas
  • 2 cups vegetable oil for frying

Instructions

  1. In a medium bowl add the turkey through the salt. Use a fork to combine all of the ingredients well. This will also help to break the turkey into little pieces.
  2. Place the corn tortillas on a plate and cover with a very damp napkin or paper towel. Microwave on high for about a minute. This will moisten and soften the tortillas so that they won’t break when being rolled.
  3. Working quickly, while the tortillas are still hot, place about 2 tablespoons of the turkey mixture in the center of each tortilla and spread it from end to end. Sprinkle on a bit of the cheese. Roll the tortilla up tightly and place 2 toothpicks through the center to keep it in place. Repeat with remaining ingredients.
  4. Heat the oil in a large cast iron skillet or dutch oven until it reaches 375 degrees. Fry the taquitos until golden brown, turning once (2 to 3 minutes per side). Enjoy hot.

I know that lots of people are freaked out by frying. Have no fear! These are easy to cook. Put maybe 2 inches of oil in the bottom of a pan that has tall sides. You can fry them on each side and turn them over when needed, and the tall sides of the pot will keep it from splattering. Learning how to fry a little at home is fun and opens up a whole world of new foods. Hello, Homemade Glazed Donuts. Life changer.
