I am REALLY picky when it comes to potato salad and I LOVE this one! Making it right now yet again and everyone always loves it. So fast in the Instant pot and love that you cook the eggs at the same time. I don’t have a steamer basket and it still works great!

I made this for a family cookout and it was a hit! Soo good! I’ve never made potato salad before and this recipe called to me. I didn’t have dill weed, nor could I find it at Aldi so I skipped that and it was still yummy! Everyone should make this. Also I don’t have a steamer basket. I made a tray/rack to lift potatoes off the bottom of my pot. Turned out great! A basket would make it easier, but can be done without. 🙂

Such a great idea to cook the eggs with the potatoes! I definitely have to try potato salad in the IP. I never get tired of learning new ideas for using it!
