Description
Simple Homemade Pumpkin Noodles that are fun to make and fun to eat. The pumpkin flavor is subtle, and you can freeze these yummy noodle alternatives to make them last for months!
Ingredients

- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 2 eggs
- 1/3 cup pumpkin puree
- 1/4 teaspoon salt
Instructions
- In a large bowl add the flour and salt and mix to combine. Add the eggs and pumpkin to a well in the center of the flour and then mix together well with a wooden spoon. Turn the dough out onto a lightly floured surface and knead lightly until the dough comes together and is soft but not sticky. Divide the dough into 4 pieces. Roll the dough out thinly with a rolling pin and then roll it up like a cinnamon roll. use a sharp knife to cut 1/4 inch pieces from the roll. Unroll each piece let the noodles dry on a lightly floured surface for a few hours. Prepare them to eat or freeze for later (details on both of those things in the post).
