Homemade Ground Beef Stroganoff

I love me a hearty, savory dish that comes together in no time. Stroganoff might look or seem like a complicated dish to make, but this recipe is a quickie that’s ready to eat in less than 30 minutes.

Creamy and rich, but not over the top, it’s a family-friendly meal that I love whipping up on a packed-to-the-brim weeknight. Between after-school activities, shuttling the kiddos around, helping with homework, and getting them bathed and ready for bed, dinner shouldn’t be another obstacle to figure out on crazy evenings.

Stroganoff has the simplicity of coming together similar to a casserole, but you get to select the vehicle you serve it on. It goes great on hot cooked egg noodles, mashed potatoes, or a heap of rice. Dig in!

What is stroganoff sauce made of?

Traditionally, stroganoff is made with beef cubes or strips and sour cream. Over time, people have modified and modernized it to include onions, mushrooms, and other ingredients to add some more dimension of flavor and texture. I love using ground beef because it’s easy to manipulate and cook in one big pot with everything else, and the consistency is great for everyone to enjoy (especially young ones who may need their meat cut into small pieces).

How long is stroganoff good for?

Because of the meat and sour cream aspects, stroganoff will only be good for 3 to 4 days. Refrigerate as much as you want to or can eat in that amount of time in airtight bags or containers.

Can Homemade Ground Beef Stroganoff be frozen?

This is a wonderful dish to prep and freeze for future meals. It thaws out nicely for leftovers when you’re in a pinch for an easy dinner! It will keep best in the freezer for 3 to 4 months.

Ingredients

Scale
  • 1 to 1 1/2 pounds lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 pound fresh mushrooms, sliced
  • 3 tablespoons flour
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 cup sour cream
  • 2 tablespoons fresh parsley
  • Salt and pepper to taste
  • Hot cooked egg noodles, rice, or mashed potatoes for serving

Instructions

  1. In a large skillet or dutch oven over medium-high heat, cook the ground beef, onion, and garlic. Cook, stirring occasionally, but don’t be afraid to let it brown up really nicely on the bottom before stirring.
  2. When the ground beef is cooked through, add the salt and mushrooms. Cook for 3 minutes.
  3. Add the flour, and cook for 1 minute, stirring often.
  4. Add the beef broth and Worcestershire sauce, and stir to combine. Let the mixture cook until slightly thickened, about 5 minutes.
  5. Remove from the heat, and stir in the sour cream and parsley. Adjust the salt and pepper to taste.
  6. Serve right away on hot cooked egg noodles, rice, or mashed potatoes.

Notes

  • You can use white button mushrooms, but if you can find them, I recommend getting “baby bella” mushrooms. They have a great texture and taste.
