Happy spring! I love this time of year and I’m so excited to be sharing a beautiful Healthy Strawberry Kiwi Smoothie recipe with you today.

Things in my neck of the woods are warming right up. The lovely thing about living in a high desert is that it’s still nice and cool at night though it can get into the seventies during the day already. I planted a raised 8 foot by 6 foot box of strawberry pants last year and planted four little rhubarb plants down the center of the box. I kept calling it my “pie box” all summer. You aren’t supposed to pick any rhubarb the first year you transplant the new plants and you aren’t supposed to let any fruit on a first year strawberry plant mature either (both of these things are to help encourage the plant to set good roots instead of worrying about making fruit), so all last year I watered, weeded, and looked forward to a warm spring day when I would be able to pick fresh sweet strawberries and slender red rhubarb from my very own yard. That day is just around the corner and I literally can’t wait. Setting down roots has some awesome perks.

While we are waiting for our patch to produce we’ve been buying our share of strawberries from the store. I bought 2 pounds last week on Saturday night to enjoy with french toast on Sunday morning. I slept in until 8 am but the kids had gotten up at their usual 7 am. In that one hour they ate every single strawberry I had bought the night before. It goes without saying, they are going to love picking fresh berries whenever they want.

In other exciting farm news, we are getting chicks at the hardware store this month (which means I’ll be getting chicks! #cantstopwontstop), while walking along our fence row I spotted some old asparagus ferns from last summer (which means we have wild asparagus growing on our property! YUM!), and last but not least, our plum and apricot trees are in full bloom (which means they’ll get rocked by a late frost and we’ll probably have no fruit on our trees again this year, boo!).

What is the best liquid to use in a smoothie?

The liquid you use is really up to you and what recipe you are making. My favorite healthy liquids are milk, coconut milk, almond milk, orange juice or water. If you prefer a thicker smoothie, simply use less liquid.

How do you make a smoothie thicker?

Adding some ice or frozen fruit does the trick in adding to the thickness of your smoothie. Try adding a frozen banana or any other type of fruit. Also, an avocado can act as a thickening agent as well as give your smoothie a creamy texture.

You can definitely use fresh fruit to make your smoothies. Smoothies are a great way to add in fruits and vegetables to your diet, so be creative. However, I often like to use frozen fruit because it adds to the thick texture I like in smoothies.

Ingredients

Scale

First Layer

  • 3 kiwi, peeled
  • 1 medium banana, peeled
  • 1/3 cup Greek yogurt (vanilla or plain)
  • 1 cup raw baby spinach
  • 1 cup milk (almond, coconut, cow, you pick)

Second Layer

  • 1 cup strawberries, frozen, unsweetened
  • 1 banana
  • 1 cup milk (almond, coconut, cow, you pick)

Instructions

  1. To make the kiwi layer place all the ingredients into a blender and blend until smooth. Add a little more milk if your blender is having a hard time processing it. Pour this layer into 2 to 4 cups (depending on how big of servings you’d like).
  2. To make the strawberry layer place all the ingredients into a blender and blend until smooth. Add a little more milk if your blender is having a hard time processing it. Pour this layer on top of the kiwi layer. Serve right away.
  3. If you are using glass cups you can cut additional fresh fruit and stick it the edge of your cup before adding the blended smoothie. This detail is pretty but not necessary.

  1. Looks yummy! I was hoping to make this to serve in little shot glasses (40ml) minus the strawberry bit! Am trying to work out by how many I need to multiply your recipe to serve about 20-25.
    How big are the glasses you use in your recipe to serve the 2-4??

    1. I’d make it a time or two get the sizes down… it’s been a long time since I made this and I just can’t remember. I assume it makes about 4 total cups but I really can’t be sure. Let me know how that turns out! It sounds so cute!
