The Best Recipe For Fluffy Chocolate Chip Waffles

Something about chocolate chip-filled breakfast foods brings me RIGHT back to my childhood! What about you? The fun play on simple dishes like waffles makes me feel all kid-like again, and I don’t mind it one bit. I used to love eating a stack of chocolate chip waffles with butter and syrup, even though my parents would kid that I was eating more of a dessert than a breakfast! To me, they can be synonymous because both are some of the funnest meals of the day.

These fluffy waffles are a life changer, too. Oh my goodness, friends, you will love them, no matter if you’re 5 or 45 years old! I have two secrets to make them the absolute best, so get ready for a little sneak peek into greatness! For ultra-light waffles, I separate the yolks from egg whites and whip the whites until they form a stiff peak. Then, after all the other ingredients are all mixed up, I carefully fold in the whipped whites, being sure not to over-mix.

It creates a sensationally fluffy and irresistible texture, PLUS the mini chocolate chips are a must (secret tip #2). They are light enough to not float to the bottom of the batter or stick to your waffle maker, and they add the perfect bite of chocolate without being too much! These waffles are basically magic, y’all.

Why are my homemade waffles soggy?

Sometimes, waffles get soggy when there’s too much moisture in or around them. Some recipes call for buttermilk in waffles, which can make the batter heavier and less crispy when cooked. That’s why I just recommend using regular milk — it’ll allow the waffles to get a great crispy texture. Also, make sure you don’t stack them, which traps steam and can result in soggy waffles. Instead, let them cool and rest on wire racks where plenty of air can escape.

How do you keep waffles warm?

To keep waffles warm while you cook the rest of the batter, set your oven to its “warm” setting or 200 degrees F. Place a wire rack over a cookie sheet to catch any crumbs, and place done waffles in a single layer on the wire rack. Remember: no stacking waffles!

How do you store leftover chocolate chip waffles?

You can simply let these fluffy chocolate chip waffles cool before placing them in a sealable bag or airtight container in the fridge to store leftovers for up to 5 or 6 days. Reheat them in a 350 degree F. oven until they’re warmed through and crispy on the outside.

Can I make waffles ahead of time?

These are PERFECT to make ahead of time and either refrigerate or freeze to keep for busy days and weeks! Simply make a batch, let them cool, and store them in a sealable bag or airtight container in the fridge for up to 5 or 6 days or the freezer for up to 3 months.

Fluffy Chocolate Chip Waffles

My fluffy chocolate chip waffles are perfectly soft and airy with just the right touch of chocolatey sweetness, thanks to two very simple secret weapons that you must try!

Total: 30 minutes
Servings: 6 large waffles

Ingredients 

  • 1 3/4 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 eggs, yolks and whites separated
  • 1/2 cup oil
  • 1 3/4 cups milk
  • 1/2 cup mini chocolate chips

Instructions 

  • Preheat you waffle iron as directed.
  • In a medium mixing bowl, add the flour, sugar, baking powder, and salt. Use a whisk to combine. Make a small well in the center of the dry ingredients.
  • In a second medium bowl, use a hand mixer to beat the egg whites until they form stiff peaks.
  • Add the egg yolks, oil, and milk to the well, and use the whisk to slowly combine the wet and dry ingredients. Stir well until very few lumps remain.
  • Fold in the beaten egg whites, taking care not to over-mix.
  • Fold in the mini chocolate chips.
  • Pour the batter into your waffle iron according to manufacturer’s directions.
  • When the waffle is done cooking, carefully place it on a wire rack to cool, taking care not to stack the waffles on top of each other. Repeat with remaining batter.
  • Serve waffles hot with your favorite toppings, such as buttermilk syrup, fruit, or whipped cream.

Notes

  • Mini chocolate chips are so light that they get caught in the extra fluffy waffle batter and don’t sink to the bottom or get stuck on your waffle iron. The whipped egg whites and the mini chocolate chips are the perfect combination for the best chocolate chip waffles.
