Excellent Sourdough Bread! A compliment every time! I recently started using rice flour on the counter and in the Banneton and wow what a difference, no more sticking. I put the bowl of sourdough on a pot holder so it's not directly on my granite countertops and I cover with plastic wrap, then a dish towel and let it rise overnight. By morning it's risen perfectly. I live in Colorado so the plastic works best.

Yes, that is quite warm, it just processed the flour quickly! Feel free to shorten your timing by a few hours or just work a little flour in in the morning if it's sticky!

Sorry if you've answered this before but I couldn't go through all the comments. I weighed everything exactly and the dough looked good before I went to bed. I let it rise for about 12 hours in a fairly warm area 75 degrees. The dough had raised but was incredibly sticky. I had to keep adding flour to the counter just to be able to move it at all. I'm letting it rest now for 2 hours and we'll see how it comes out but do you know what could have made it so sticky and wet? Used King Arther bread flour.

Yep, just prep them both all the way through shaping and putting them to rise the last time then just bake the first one, and then bake the second in the hot dutch oven after the second one comes out, it won't hurt it to sit an extra hour while the first one bakes, I do this all the time.
