In reply to Erin. It'll work fine you just might need to melt a little butter with it since sausage produces quite a bit of grease and that's part of the recipe. I's try 4-6 tablespoons of butter melted in the pan before you add the flour.

Pretty well spot on, I made a little extra gravy and poured it over the eggs at the 30 minute mark and the bake for another 15 minutes. Excellent Recipe.
