This was sooooo good. Used apricot jam and added about a table spoon of Sriracha for some spice. Loved it. Im postpartum and cooking is a struggle at the moment - soooo good to have a recipe that worked the first time around. Thank you!

I think one batch at a time does work better, the chicken creates a lot of juice and they don't sit in the sauce quite the same when the slow cooker is crowded.

Just tried this myself with a double recipe (Costco wings were on sale), and it turned out pretty well. The sauce ended up really soupy, so I had to reduce it down after the fact to get to a more sauce-like consistency. I also think next time I try this I'll add more spices to intensify the flavor, and marinate overnight to really lock in the flavor. This will end up joining my recipe library, although maybe in the future I won't do double batches, at least not all at once.

Made the recipe with what jam I had on hand; the rest of a Mango Habanero Jam left from a
Charcuterie board. Winner!! OMG! Im in love! Paired with the chicken fabulously! Since I was using that type of flavor, I did add minced ginger and a splash of sesame oil. Spicy? Yes but hubby doesn't eat chicken anyway so no need to worry on the spice level. That jam is so good. I'm on a quest now to try it in other recipes. My next will be a BBQ sauce. Yum! Thanks for sharing Melissa. I enjoy your site!
