Easy Slow Cooker Vegetable Lasagna

Easy, healthy vegetable lasagna made in the slow cooker. So much to love! I can remember the first time that I had lasagna cooked in the slow cooker. My older sister was blessing her new baby in church in Idaho, and my little family (we had 3 kids at the time) drove up to celebrate the day with them. The problem and benefit of having so many people show up at your door to celebrate a new baby is that you have a new baby and you have company. My sister thought ahead and made two slow cookers of lasagna for us all to Continue Reading →

With tons of flavor and 75% less fat than their mayo counterpart, there's so much to love. These spreads come in three different flavors, can be found in the refrigerated deli section at your grocery store, and are perfect for all things sandwich! Keep your eyes peeled, Continue Reading →

One Pot Creamy Pumpkin Pasta

One pot creamy pumpkin pasta with toasted walnuts and parsley is a simple meatless meal the whole family will love. Plus, it's done in 20 minutes! Few things are more wonderful than a hearty rich pasta dish that practically makes itself. You are going to love this One Pot Creamy Pumpkin Pasta. Here's what is awesome about this recipe: It's done in about 20 minutes. It has vegetables hiding in it (the orangey color from the pumpkin just looks cheesy). It's meatless, though adding a little protein to this dish would be a piece of cake (or chicken, for that matter). All of those things make Continue Reading →

Quick and Easy Flatbread Pizzas

Easiest. Recipe. Ever. These flatbread pizzas are perfect to make for a quick lunch, easy dinner, and everything in between. Pineapple Salsa

I love fruit salsa! There's something magical about the sweet, spicy, savory, and salty flavors all mixed together into one amazing dish. Pineapple salsa is always a favorite at our house because pineapples seem to be pretty available and sweet whenever we want them. My kids also happen to love pineapple, which means I pick one up pretty often for them to eat. I really like using pineapple for fruit salsa because it's so acidic naturally, kind of like a tomato, that it just transitions into salsa really well. I like to add sweet colored bell peppers for some color, crunch, Continue Reading →

Simple Roasted Beets is just about the only beet recipe you need in your life (except for maybe pickled beets, those are good too). So many people tell me that beets taste like dirt to them, but I think you'll change your mind after you have them roasted with a little olive oil and kosher salt. Meatless Monday Baked Macaroni (dairy free!)

I'm constantly on the hunt for simple no-fuss meals my kids love, and this one will be heading into our permanent rotation. I love that it's full of vegetables; they Continue Reading →

Put-it-on-Allthethings Cilantro Ranch Dressing and Sauce

Today I'm sharing one of our all time favorite dressing/sauces and I can't wait for you to taste it. Here's some of the things that we'll put it on. I'll replace the enchilada sauce in a recipe with it and bake it right on top of the enchiladas or we'll make smothered burritos in a similar way. It's excellent as a salad dressing and Continue Reading →

Chopped Asian Peanut Salad with Homemade Peanut Dressing

Good morning! We had an exciting weekend with our chicks hatching in our incubator! I'm planning on taking pictures and telling you all about their birth story soon. While you are waiting for a chick post, you can enjoy this fabulous Chopped Asian Peanut Salad with Homemade Peanut Dressing. This salad is super versatile and would be awesome with the addition of Chow Mein noodles (you know, those "fried worms" as my dad used to call them), mandarin orange pieces and even Continue Reading →

Roasted Red Pepper Hummus

Roasted Red Pepper Hummus is my snack right now. I love the sweetness of the peppers with all that creamy savory hummus goodness. It's fabulous with fresh veggies, but let's be honest, I love it best with homemade pita chips or even just tortilla chips. I've even been using it as a mayo of sorts in my sandwiches. I would spend tons of money on hummus every month if our grocery store carried it. I love it! Sabra's Roasted Pine Nut is my all-time favorite and I just tried the hummus quartet from Trader Joe's and it was great too. But Continue Reading →

Pomegranate Mango Salsa has me drooling over here! My friend Emily from One Lovely Life is here today sharing an amazing, fresh, and healthy recipe. Take it away, Emily! I love this time of year! Fresh starts, healthy food, and so many beautiful things to eat! I can't get enough of pomegranate these days. Knowing that the season winds down at the end of this month makes me all the more eager to fit in pomegranate any way I can. This season, I've been adding it to my favorite savory dishes (like this rice), and it's been so fun to learn that it Continue Reading →

Overnight Steel Cut Oats – the cold cereal method

Raise your hand if sometimes you don't want to get up and get breakfast going in the morning *raising hand.* Now raise your hand if you get up and do it anyways *still raising hand.* Great job Momma! It's not always easy but we do it. Ok, ok, enough of that. We all know that pre-school is not always the calmest part of the day. Not only do people need nourishment that will last them until lunch (because there are no snacks in first grade, folks), but they also need shoes relocated (for the millionth time), hair brushed, and homework Continue Reading →

Avocado Bruschetta and other awesome tailgating recipes

It's that time of the month! 12 bloggers, 12 recipes, 12 ingredients or less. This months theme is appetizers which very easily could be read as "football food" this time of the year. Whether you are watching the big game or not, this list of appetizers is sure to please. Check out all of the links at the bottom of the post for the rest of the recipes. To the horror of many, we don't watch football; not college, not pro, not high school (our school is so little we don't even have a football team). And to make matters worse Continue Reading →

Quick and Easy Refrigerator Pickled Banana Peppers

Pickle lovers unite! You will fall off your chair when you read this recipe and see just how easy it is to pickle banana peppers at home. No need to can, just pour the brine over the prepared peppers and stick them in the fridge. The best part? They last for months. I love all things pickles and pickled banana peppers top my list. Continue Reading →

Farmhouse Egg Bake

Sometimes I sit at my dinner, take a look at the meal, and try to determine what percentage of the meal I produced. It always varies but I get so excited when the percentage is really high. I'll look over the meal and then I'll announce to the family all of the things we grew. I love knowing where our food comes from and I want my kids to enjoy the literal fruits of our labors. Pork or lamb roast (animals we raised and processed), green beans and sweet corn (from the garden), and some canned peaches or applesauce (also from Continue Reading →

18 Zucchini Recipes – because there really is such a thing as too many zucchini!

Zucchini is the one and only garden vegetable that I'm glad to see freeze at the end of the year. My frugal soul can't waste a single one and I think my plants take the challenge to heart. I love the stuff, but after a few months of eating it every way I can think of, it starts to lose its charm. If you are new to gardening start with zucchini, it's nearly impossible to kill and produces like you can't believe. I know I won't be the only one drowning in zucchini in the next couple of weeks, so I'm Continue Reading →

Hello again, Bless This Mess readers! I'm so excited to be sharing one of our new favorite meals with you today: Think Greek Quinoa Salad! The best Blender Salsa ever

While I'm waiting anxiously for my tomatoes to ripen I've been making and eating this salsa like it's my job. This is my very favorite quick and easy blender salsa recipe that uses canned tomatoes. Canned tomatoes are such a great option in cooking when the garden ones aren't quiet ready because they were actually picked and processed when the tomatoes were ripe. They win over those mealy store-bought tomatoes any day, especially in salsa. Bonus points if you are using home canned tomatoes from last year's garden. This recipe is quick, easy, and awesome. I think you should whip it up Continue Reading →

Pasta Salad for a Party

We are big fans of the Fancy Nancy books at our house. Fancy Nancy is a little girl who loves new adventures and using extra fancy words in her books. In a few of the books Fancy Nancy and her family eat "al fresco, which is fancy for outdoors". Somewhere along the way, my kids picked up the term "al fresco" and now it's part of their normal vocabulary. On many warm afternoons they ask if we can eat dinner al fresco and on more nights than not I indulge. I love eating outside as much as I love hearing Continue Reading →
