Tortellini Vegetable Soup

Tortellini Vegetable Soup

Tortellini Vegetable Soup is a satisfying meatless meal that the whole family will love. Plus, it lets you get dinner on the table in 30 minutes! Tortellini Vegetable Soup combines all of my favorite things - vegetables, pasta, soup, and cheese - in one simple, satisfying dish that your whole family will love. I like this recipe because it's meatless, ready in about 30 minutes, and a simple way to work veggies into dinner without anyone paying too much attention. When this recipe was on my meal plan, I put cutting up the vegetables for the soup on my prep day list. Continue Reading →

Classic Chicken Noodle Soup

This Classic Chicken Noodle Soup comes together in just 30 minutes. It is warm and comforting, and the whole family will love it!  Welcome welcome, January! This is one of my favorite months of the year. I love the fresh start - I'm putting away my Christmas decor and decluttering/purging/organizing, it's my birthday month, and it's a natural season of renewal for most of us (me included!). I love setting down the cookies, candies, and party food, picking up my meal plan with my favorite healthy dinners, and moving a little more. Long live January. I think 2016 was rough for a lot Continue Reading →

A dozen slow cooker lasagnas for you - making lasagna doesn't have to be a time-consuming process that makes a huge mess of your kitchen!

A dozen slow cooker lasagnas for you - making lasagna doesn't have to be a time-consuming process that makes a huge mess of your kitchen! As I was thinking about this week, I thought it would be great to have some really simple meals for you! Thanksgiving is all about the food and I know you are spending a lot of time thinking, planning, and testing. The thing is, you still have to eat on the days leading up to Thanksgiving too. It might not be what you want to do, or what is easiest, but your family is going to Continue Reading →

Easy Slow Cooker Vegetable Lasagna

Easy, healthy vegetable lasagna made in the slow cooker. So much to love! I can remember the first time that I had lasagna cooked in the slow cooker. My older sister was blessing her new baby in church in Idaho, and my little family (we had 3 kids at the time) drove up to celebrate the day with them. The problem and benefit of having so many people show up at your door to celebrate a new baby is that you have a new baby and you have company. My sister thought ahead and made two slow cookers of lasagna for us all to Continue Reading →

15 One Skillet Dinners

Get on the one skillet meals bandwagon! You'll cut back on dishes and save yourself time! My love of simple, delicious, family friendly one skillet meals knows no end; I love them as much as I love one-pot meals, which is really saying something. If you haven't gotten on the one skillet meal wagon yet, I'm sharing a few recipes today that will point you in the right direction. Here are a few reasons why using one skillet to cook the whole meal/dish is awesome: When you cook up the meat and then add some kind of liquid to make a Continue Reading →

Homemade Pumpkin Noodles

Aren't these pumpkin noodles pretty?! You are going to love how much fun they are to make and eat! Few things are more comforting to me than homemade egg noodles. When you grow up eating something simple, filling, and delicious, I think you crave that food whenever you need a little piece of childhood in your life. Egg noodles are one such recipe for me (I also am very sentimental over my mom's dinner rolls, and my grandma's cobbler and her chocolate sheet cake). My grandma lives on a gorgeous old farm in Southern Indiana (I wrote about it once if Continue Reading →

One Pot Creamy Pumpkin Pasta

One pot creamy pumpkin pasta with toasted walnuts and parsley is a simple meatless meal the whole family will love. Plus, it's done in 20 minutes! Few things are more wonderful than a hearty rich pasta dish that practically makes itself. You are going to love this One Pot Creamy Pumpkin Pasta. Here's what is awesome about this recipe: It's done in about 20 minutes. It has vegetables hiding in it (the orangey color from the pumpkin just looks cheesy). It's meatless, though adding a little protein to this dish would be a piece of cake (or chicken, for that matter). All of those things make Continue Reading →

Creamy Chicken and Vegetable Baked Pasta

This baked pasta has been one of my favorite meals since I was newly married. I got the recipe from my Aunt RaNae and have been adapting, enjoying, and making it in all kinds of variations for years. This recipe is simple tried and true deliciousness that you are going to make over and over again. It's super versatile and fool-proof. I like to make the sauce the same every time because that's the backbone of this dish. You have a lot of options when it comes to the kinds of pasta you use (you can use lots of different shapes Continue Reading →

Disclosure: This post was sponsored by GOOD THiNS through their partnership with POPSUGAR Select. While I was compensated to write a post about GOOD THiNS, all opinions are my own. I’ve been working on prepping meals/ingredients/lunches/stuff for the freezer more and more lately and it has been such an awesome thing to have done and ready to use! I even had the chance to teach a meal planning/food prep class to over 30 women this past month and I loved it. I’m getting into a great groove and having more food conveniently ready in the fridge is a game changer. What is it Continue Reading →

14 Healthy Freezer to Slow Cooker Recipes (NO cooking on prep day!)

Today is the day! The book I've been writing, testing, and getting ready for you since last September is LIVE! Get all the details here. I started this massive project of learning about and creating the very best healthy freezer to slow cooker recipes last September. I had a big prep day with my sister and my freezer was full. I started eating my way through each recipe and trying them again and again. Little did I know that in October, my 4 oldest kids would be misdiagnosed and we'd be horribly ill for 6 full weeks. Raising littles and getting dinner on Continue Reading →

Butternut Squash Macaroni and Cheese

How is the new year treating you?! I assume you've made a few goals or resolutions and chances are pretty good that those include something along the lines of being healthy. I'm here to help you out with some of those goals with this awesome Butternut Squash Macaroni and Cheese recipe. I love this recipe! It's easy to make, you are sneaking in some fabulous vegetables, and this happens to be a little lower in calories than traditional macaroni and cheese (thanks to the vegetables). The flavor is awesome, it's creamy, it's rich, and it makes for a great meatless Continue Reading →

30 Minute Simple Roasted Tomato and Sausage Pasta

This pasta. THIS pasta! Sometimes I spend a lot of time and resources making a meal and it bombs. SO disappointing. Other times the amount of work I put in is pretty equal to the enjoyment. Then there's that rare occasion that I throw something together and it's a huge hit. It always feels a bit like I cheated because I didn't do much but I get a lot out of it (like kids who don't fuss the entire dinner, that's always a great thing). This 30 Minute Simple Roasted Tomato and Sausage Pasta is one of those meals that kind Continue Reading →

One Pot Pasta Primavera

I'm in love with all things "one pot" meals. They are quick, easy, full of flavor and did I mention easy? Today's One Pot Pasta Primavera cooks in about 10 minutes and you're done! The sauce is really flavorful but it's still light enough you don't feel guilty about eating it. We loved this dish! I'm at the point in my pregnancy (30 weeks along!) that I'm just plain tired. I'm constantly on the hunt for simple no-fuss meals my kids love, and this one will be heading into our permanent rotation. I love that it's full of vegetables; they Continue Reading →

Spinach and Mushroom Marinara with (or without) Meatballs

When I was growing up, my mom bought spaghetti sauce in a jar and that was fine, but I would  beg her to let me "doctor it up." I would sauté all kinds of things like mushrooms, peppers, carrots, and onion, then add the jarred sauce, extra seasonings, and a can of diced tomatoes. Just a few little changes made all the difference to that store-bought sauce, and I loved making the change. Now that I'm cooking on my own, I've realized that making pasta sauce from scratch doesn't take much more effort than "doctoring" that jarred stuff. The idea is the same, but Continue Reading →

Pasta Salad for a Party

We are big fans of the Fancy Nancy books at our house. Fancy Nancy is a little girl who loves new adventures and using extra fancy words in her books. In a few of the books Fancy Nancy and her family eat "al fresco, which is fancy for outdoors". Somewhere along the way, my kids picked up the term "al fresco" and now it's part of their normal vocabulary. On many warm afternoons they ask if we can eat dinner al fresco and on more nights than not I indulge. I love eating outside as much as I love hearing Continue Reading →

Creamy Chicken and Bacon Pasta

My in-laws own the grocery store here in town. We moved home to this tiny town almost a year ago so that my husband could start working with his dad, build and open a hardware store that is connected to the current grocery store (should be done and open this June!), and to be closer to family. There are a few perks to owning a grocery store and one of my favorites is the gifts that my mother-in-law gives me. For Christmas she gives all of her kids 10-15 cases of whatever they want from the grocery store. I love this Continue Reading →

Linguine Rosa with Shrimp

Make. This. Recipe. Is that enough text for this post because it's all that really needs to be said... This recipe's origins come from Cooking with Greek Yogurt by Cassie Johnston (Wholefully). I started with the idea in the book (which is fabulous by the way) and made it into my own. Linguine Rosa with Shrimp was a huge hit at my house! This recipe is healthy (full of protein, whole grains, veggies, and the creaminess is from Greek yogurt), it comes together in about 30 minutes, and it tastes amazing. My husband was so sad when the leftovers were gone the next day Continue Reading →

Double Cream Double Pea Pasta

Our garden has been severely ravaged by wandering chickens. The little buggers ignored it for weeks and then one day just discovered that it existed. I walked outside to find all of my beet tops, spinach, and lettuce eaten to the ground and some serious pecking to the cabbage and pea plants. I've been leaving the birds in their coop unless I'm outside to chase them out of the garden. The kids have been pretty sad about not having the chickens out and my oldest asked me the other day when they will "be out of time-out." I decided their time-out will end Continue Reading →

Steak and Mushroom Marinara

Homemade pasta sauce with steak, steak and mushroom sauce

I have some great crafting in the making, but until its complete I have another tasty recipe to share. Happy Monday! Emily at One Lovely Life made her version of this recipe a few weeks ago and I've been excited to make something similar. Anything that comes out of her kitchen is bound to be delish. And if you missed it, let's review that cheesecake she made for a guest post here. Now why can't we eat this for dinner?! The weather has been so strange here in Utah. We were outside on Saturday working on the yard, took a lunch break, Continue Reading →

Creamed Pasta with Bacon and Vegetables

I love bacon. I love it because you get so much flavor for a relatively small amount of money. I buy a pound, cut it into thirds (package and all) and freeze each third individually in a baggie. I used a third of a pound of bacon in this recipe, but I wanted more. I'm calling for a half pound for the recipe, but a full pound never hurt anyone. Your significant other won't complain if you are a little heavy handed on the bacon either. Now the pasta is "creamed" because the sauce is literally just cream.  It makes things light and wonderful.  You don't Continue Reading →
