Shortbread Jam Thumbprint Cookies are a must make. The cookie base is a tender, sweet, and buttery shortbread cookie and it’s made fancy (and pretty) by the addition of a bit of jam to the center right before cooking. These, my friends, use real maple syrup, which gives the cookies a light and pleasant maple flavor without being strong or overwhelming. There are a few desserts that I make over and over again. Homemade vanilla ice cream (a recipe I can’t believe I’ve never shared!), chocolate chip cookies, brownies, and these oatmeal cookies with cinnamon chips! These are tried and true and oh so good! Homemade Oreos with a Candy Cane Cream Filling

Here are slacker cookies number two (you might also like some store bought cookies with chocolate and ginger from yesterday if you are in a slacker mood.) These were super good and I’m so glad I thought of them. Just start with a store-bought shortbread cookie, add some lemon cream filling, drizzle with some white chocolate and then sprinkle with lemon sugar. No baking needed.
