16 Cucumber Recipes that are sure to please

Summer cucumbers are here and I have a great list of 16 cucumber recipes that are sure to please today.

Confession: I didn’t like or eat cucumber until I was 24 years old.

Pregnancy is a funny thing when it comes to food likes and dislikes. Each pregnancy I have stopped liking something I did previously and also started liking something I didn’t. Things I stopped liking or eating include: peanut butter icing, cream cheese icing, pineapple as in ingredient in savory dishes (like on pizza or on a kabob), and cilantro in large quantities (so sad about this one). Things that I started liking that I didn’t used to eat: cucumbers, buffets, and nacho cheese. Isn’t that a funny list? And of course all of the foods have stories about the times that I decided I did and or did not like said item, but we’ll save those for another day.

I’m so glad that I added cucumbers to my list of new likes (I could probably due without liking nacho cheese and buffet-style restaurants, but it is what it is!). I eat them often now and even love them on tacos, sandwiches, and juiced. Yum!

  1. Greek food is off my list, gag! Thanks kid #2! Everything else has come back to be good again.

    I like cucumbers, but I don’t love them. Mostly because one will be delicious and the next will be disgusting. :)

  2. I am so happy that my kids LOVE cucumbers, seriously one of my favorite veggies. I love to eat them just with salt, but my favorite way to eat them is chopped up with tomatoes and onions (maybe a bit of cilantro if it is on hand), sprinkle with lemon juice and salt. So tasty! We had this almost every day during the summer growing up because of our crazy huge garden. Add it to beans, to grilled chicken, or by itself.

    I didn’t like hamburgers until my second pregnancy, then I craved them all the time. I still don’t like a big burger, but a small one fully loaded with toppings? Delicious! Also I used to have a fave granola recipe…until my last pregnancy. So sad that I feel nauseous whenever I eat it now!

  3. Caramel… it gives me a headache now and I used to eat it all the time… twix, caramel sundaes, you name it. Thanks to my first, I can no longer eat it. I guess my hips thank him…

  4. Those cucumber boats are so much fun! We’ve been swimming in cucumbers, so these ideas are great. Pregnancy made me….loose my sweet tooth (don’t worry, it’s back now). That was shocking to me!!!

  5. Pregnancy aversions and cravings can be crazy. With my first I became completely unable to think about eating at Texas Roadhouse. I still don’t like the idea but I have eaten there once (2 years later for a family event) and it was great, but the idea is still there :). When I am pregnant I can’t keep pickles in the house because I will eat them all in one sitting. And Cheetos are another craving of mine. With my second the first pregnancy symptom I noticed was a crazy craving for Cheetos. I ate a whole bag in one day, and when I wasn’t eating them I was daydreaming about eating them.
