Easter Bunny Salad

If I make a giant salad with lots of yummy things on it, slathered in dressing, my kids will gobble it up. I’ve been working hard on my 2012 bucket list number 6 and think I’m almost ready to post a recipe. I was making a salad for lunch yesterday and kept thinking about my dad. My dad called green salad “rabbit food” when I was growing up. He’d ask my mom if she would make “some rabbit food” for dinner, and she knew just what he was talking about. Thinking of my dad, his phrase, and making a salad the week before Easter resulted in something unique. This is how our salad turned out:

I read a study a few years ago that said kids were not motivated to eat more or better if things were cut into shapes or styled to look more fun/cute. For some reason that stuck with me and I haven’t really done much of that kind of thing; what a mistake I’ve been making. I couldn’t even take a quick picture before the babies wanted to munch on it. Case in point:

Here’s the break down:
Bunny head – Thinly chopped Romaine lettuce
Bunny ears – Two large outer-leaves of Romaine lettuce trimmed into an ear shape
Eyes- One white button mushroom, stem removed, cut in half and placed up-side-down
Cheeks- 2 cucumber slices
Nose- Radish, halved and then cut into a triangle
Mouth – Carrot sticks (thin)
Teeth- Radish slices trimmed to a rectangle

Assemble to look like a rabbit. Serve the dressing on the table and add it right before eating because it just doesn’t look as cute with the dressing on it.

  1. I think the study is wrong also because I could get you to eat ‘bunny money’ and ‘carrot coins’ (thin slices of carrot and celery) but if I asked you if you wanted a carrot stick or a piece of celery you would make a face.
